INGREDIENTS

  • 1 whole cauliflower, leaves trimmed
  • 2 tbsp Olive oil
  • Sea salt
  • 1 tsp Lemon zest


Yoghurt sauce:

  • 1 cup Greek yoghurt
  • 1 tsp fresh lemon juice
  • 2 garlic cloves, thinly sliced
  • 1/4 cup pomegranate arils
  • 1/4 cup rocket leaves
  • Handful of slivered almonds

Serves - 2 or 4 (depending on if main or side)

Cooking time: 1 hour 

INGREDIENTS

  • 1 whole cauliflower, leaves trimmed
  • 2 tbsp Olive oil
  • Sea salt
  • 1 tsp Lemon zest


Yoghurt sauce:

  • 1 cup Greek yoghurt
  • 1 tsp fresh lemon juice
  • 2 garlic cloves, thinly sliced
  • 1/4 cup pomegranate arils
  • 1/4 cup rocket leaves
  • Handful of slivered almonds


METHOD

  1. Turn your Cuisinart Air Fryer Oven  ON in Roast mode at 200 degrees.
  2. Trim the leaves and base of the cauliflower so that it can stand upright. Drizzle all over with olive oil and rub with hands to coat the surface. Season with sea salt and lemon zest. Roast in  Air Fryer Oven for 50-60 mins (depending on the size of your cauliflower).
  3. To make your yoghurt sauce simply combine all ingredients and mix well. Reserve some pomegranate arils and rocket leaves to garnish on top.
  4. Remove the cauliflower from the Air Fryer Oven and top with the yoghurt sauce, serve immediately while hot.
