INGREDIENTS
- 1 x red onion, finely chopped
- 1 x truss tomato, finely chopped
- 3 x garlic cloves, grated
- 2 x ripe avocados, mashed
- ¼ teaspoon Paprika
- 1 x teaspoon ground cumin
- ½ teaspoon ground coriander
- ½ teaspoon cracked black pepper
- 1 x teaspoon salt
- Juice of half a lemon
- ¼ cup fresh coriander, chopped
METHOD
- Add the red onion & garlic to the Cuisinart Mini Chopper bowl - coarsely grind (grind button) then add to a large mixing bowl.
- Add the tomoato to the Cuisinart Mini Chopper bowl - coarsley grind (grind button) then add to a large mixing bowl.
- Peel and remove the seeds of avocados. Use a spoon to scoop them into the Cuisinart Mini Chopper bowl.
- Coarsley grind avocados using the Cuisinart Mini Chopper (grind button).
- Squeeze the lemon juice over the top of avocados to prevent browning and mix with a spoon.
- In a large bowl add avocados, garlic, onion, and tomato. Stir well.
- Add spices, salt and coriander then mix with a spoon to combine.
- You can add ½ teaspoon chili powder if you like hot guacamole.
- Serve with tortilla chips or on top of any tacos.
How to select Avocado for Guacamole
- If you are going to make guacamole tonight, then select perfectly ripe avocados. If you are shopping ahead, you can get firm avocados.
- Consider buying ripe avocados that their stems are attached and you should be able to push the sides in slightly with your fingertips. If you are going to make guacamole another day you can store ripe avocados in the refrigerator, to slow down ripening.
- Avoid buying overripe avocados that are too soft or those with missing stems, because they are more likely to have brown parts inside.
- If the avocados are hard, place them in a paper bag with an apple or banana (which releases ethylene gasses to speed up ripening) and leave at room temperature for 2-3 days.
How to store Guacamole
You can preserve your guacamole by placing plastic wrap directly over the surface of the guacamole, releasing all extra air. Even if storing in an airtight container, putting plastic wrap directly over the guacamole will keep it looking fresh and vibrant. Guacamole tastes best within a day or two and we do not recommend freezing because the vegies lose their flavours and may get soggy.
