LEMON CURD AND GOAT MILK GELATO

INGREDIENTS

  • 500ml refrigerated goat milk 
  • 250g lemon curd*
  • 100g goat cheese*

TO SERVE

  • Waffle cones or cups

METHOD

  1. Place all ingredients in a blender and process on high for a minute until combined and frothy, this will help the gelato achieve a lighter consistency.
  2. Pour the mixture into the Cuisinart Ice-Cream & Gelato Maker. Turn the machine on. Set time to 50 minutes and press start. 
  3. Once churned, serve immediately or transfer to a loaf pan or a freezer-safe container. Press a sheet of baking paper against the gelato and freeze for 2 hours for a firmer consistency. 
  4. If stored in the freezer overnight or longer, place in the fridge for 15 minutes to soften as gelato is served at higher temperatures than ice cream.

*Notes: look for lemon curd that contains eggs. I used goat’s cream cheese (chevre) here to add a little more flavour and a creamier consistency to the gelato.
