INGREDIENTS
- 1/4 cup coconut oil
- 2 cloves garlic, chopped
- 1 small onion, chopped
- 1 full broccoli florets
- 4 small carrots, chopped
- 1 large potato, chopped
- 1/2 cup spinach (I’ve used frozen)
- 2 cups vegetable broth
- 2 cups almond milk
- 1/4 cup nutritional yeast OR grated parmesan
- Salt & pepper to season
- croutons + desired herbs
METHOD
- Over medium heat add coconut oil, garlic, onion and potato to a pot, saute until softened.
- Combine broccoli, carrots, spinach, vegetable broth, and almond milk. Cook on low heat for approx. 25 minutes.
- Sprinkle in nutritional yeast / grated parmesan
- Let cool slightly before pureeing with a stick blender.
- Blend until all chunks are removed, taste and season with salt and pepper accordingly.
- Garnish with fresh croutons and desired herbs.
