
INGREDIENTS
- 6 large eggs
- 1/4 cup (60ml) milk
- 1/2 cup (50g) grated cheese (cheddar or tasty)
- 1/2 cup (50g) diced cherry tomatoes
- 1/2 cup (50g) grated zucchini (squeezed to remove excess water)
- 1/4 cup (30g) diced ham
- Salt and pepper to taste
METHOD
- Set the Cuisinart Gourmet Pro Oven to 180°C using the bake function.
- In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- Lightly grease a 12 mini muffin tray.
- Divide the diced cherry tomatoes, grated zucchini, ham, and cheese evenly among the muffin cups.
- Pour the egg mixture into each cup, filling about 3/4 full.
- Place the muffin tray on the middle rack of the oven.
- Bake for 12–15 minutes, or until the frittatas are set and slightly golden on top.
- Allow the frittatas to cool for a few minutes before removing them from the tray.
- Pack them into lunchboxes or store them in an airtight container in the fridge for up to 3 days
