WHITE BEAN DIP

WHITE BEAN DIP

Ingredients

  • ½pound white beans, preferably a softer
  • variety like Great Northern, dried and
  • preferably soaked overnight
  • 8cups water
  • 1teaspoon fresh rosemary
  • 1garlic clove, crushed
  • ½teaspoon grated lemon zest
  • 1tablespoon fresh lemon juice
  • 2tablespoons olive oil
  • ¾cup water
  • pinch crushed red pepper
  • ½teaspoon kosher salt

Preparation

  1. Drain and rinse the soaked beans.
  2. Put the beans and the water into the cooking pot of The Cuisinart® Multicooker. Secure the lid.
  3. Select Beans. Set the time for 4 minutes, and press Start.
  4. Once the tone sounds, allow the pressure to release naturally for 10 minutes, and then
  5. press the Steam Release button to quickly release pressure.
  6. When the pressure is completely released, carefully open the lid and drain the beans.
  7. Allow the beans to cool for about 10 minutes, until they are still warm, but not hot.
  8. Transfer the beans to the bowl of a food processor fitted with the chopping blade.
  9. Add the remaining ingredients and process until smooth.
  10. Taste and adjust seasoning as desired.
