Ingredients
- ½pound white beans, preferably a softer
- variety like Great Northern, dried and
- preferably soaked overnight
- 8cups water
- 1teaspoon fresh rosemary
- 1garlic clove, crushed
- ½teaspoon grated lemon zest
- 1tablespoon fresh lemon juice
- 2tablespoons olive oil
- ¾cup water
- pinch crushed red pepper
- ½teaspoon kosher salt
Preparation
- Drain and rinse the soaked beans.
- Put the beans and the water into the cooking pot of The Cuisinart® Multicooker. Secure the lid.
- Select Beans. Set the time for 4 minutes, and press Start.
- Once the tone sounds, allow the pressure to release naturally for 10 minutes, and then
- press the Steam Release button to quickly release pressure.
- When the pressure is completely released, carefully open the lid and drain the beans.
- Allow the beans to cool for about 10 minutes, until they are still warm, but not hot.
- Transfer the beans to the bowl of a food processor fitted with the chopping blade.
- Add the remaining ingredients and process until smooth.
- Taste and adjust seasoning as desired.
