INGREDIENTS
- 1 cup plain flour
- 1 cup rolled oats
- 1 cup brown sugar
- ¾ cup desiccated coconut
- 125g unsalted butter
- ½ tsp baking powder
- 2 tbsp golden syrup
- 11/2 tbsp hot water
METHOD
- Sift flour into a bowl. Add sugar, coconut and rolled oats.
- Melt butter in a saucepan on low heat, add golden syrup. Combine the baking soda with the water and add to the butter mixture.
- Pour the liquid into the dry ingredients and mix well to combine.
- Place walnut shaped balls of the mixture onto trays lined with baking paper. Press down on each ball with a fork to flatten slightly. Allow room for the mixture to spread on the tray.
- Bake in the Cuisinart Gourmet Pro Combi Oven on 160C for 10 minutes or until golden.
DAIRY FREE COCONUT ICECREAM
INGREDIENTS
- ⅓ cup white sugar
- ⅔ cup light brown sugar
- Pinch flaked salt
- 2 cans (400ml) coconut milk (do not use "lite")
- 2 tbsp pure vanilla extract
METHOD
- In a medium bowl mix all ingredients together very well until there are no clumps (you can use a blender on low speed, or a hand blender, to be sure).
- Cover, and refrigerate for at least 2 hours or overnight. Whisk mixture again before pouring into the ice cream maker.
- Pour the mixture into the mixing bowl of the Cuisinart® Ice Cream and Gelato Maker fitted with the ice cream paddle. Turn unit on, set Timer and press Start. Let mix until thickened, about 50 – 60 minutes. The ice cream will have a soft, creamy texture. For a firmer consistency transfer to an airtight container and place in freezer for about 2 hours before serving between anzac cookies. If frozen for longer remove from freezer about 10 minutes before serving.
