BEEF BRISKET TORTILLA

INGREDIENTS

  • 1.5kg beef brisket

RUB

  • 1 tbsp brown sugar
  • 1 tsp garlic powder
  • 2 tsp paprika
  • ½ tsp black pepper
  • ¾ tsp mustard powder

BBQ SAUCE

  • ½ cup apple cider vinegar
  • 11/2 cups ketchup
  • ½ cup brown sugar
  • 1 tbsp Worcestershire sauce
  • 2 garlic cloves minced

METHOD

  1. Mix rub ingredients together and rub over the brisket
  2. Mix BBQ sauce ingredients together and add to the Meal Maker
  3. Add the brisket to the Meal Maker and set to slow cook on low for 8 hours (for 1.5kg)
  4. Once brisket is cooked, remove from the Meal Maker and place on a tray. With the remaining liquid in the slow cooker, pour into a saucepan and reduce by simmering over a medium / high heat for 5 minutes or until a syrup consistency is reached.
  5. Using 2 forks, shred the beef and return in the slow cooker with the sauce for serving.
  6. Yummy served on tortillas with apple slaw!
