INGREDIENTS

  • 2 cups dried chickpeas (do not used canned)
  • 11/2 cups fresh parsley leaves
  • ½ cup fresh coriander leaves
  • 3 garlic cloves (chopped)
  • 1 tsp sea salt
  • 11/2 tsp cumin
  • 2 tsp ground coriander
  • ½ tsp cayenne pepper
  • Cooking spray

METHOD

  1. 1 day prior to making the falafel, place dried chickpeas in a large bowl and cover with water. Ensure the chickpeas are covered by around 7cm of water. Soak for 18-24 hours, then drain and pat dry with paper towel. 
  2. Place the chickpeas along with all other ingredients into a large food processor. Process ingredients for about 20 seconds, then scrape down the sides of the food processor and blend again until the mixture is well combined but not mushy.
  3. Place the falafel mixture in the fridge for about 60 minutes.
  4. Form the falafel mixture into balls either with your hand, or a small ice cream scoop. If you wish, make the mixture into a small patty.
  5. Spray the air fryer basket with cooking oil to prevent sticking, place falafel balls onto the basket and use the cooking spray to lightly spray the falafel balls. Air fry at 230C for 15 minutes, turning half way through for even results. They should be crispy and slightly brown on the outside. Cook the falafel balls in batches if needed. 
  6. We recommend serving with tahini, pita bread, cucumber and tomato.
