
INGREDIENTS
- 1 whole duck (we used Luv-A-Duck)
- 3 tsp Chinese five spice powder
- 4 Tbsp maple syrup
- 4 Tbsp soy sauce
- 1/2 cup chicken stock
- 1/2 cup water
To serve: hoisin sauce, fresh cucumber, spring onion and pancakes or bao
METHOD
The night before cooking, prepare your duck by preparing this marinating syrup:
- Combine the 5 spice powder, maple syrup, soy sauce, chicken stock and water in a saucepan and bring to the boil. Simmer for approx. 10 minutes until the sauce thickens.
- Pat your duck dry with paper towel and brush all over with the syrup. Roughly half should be left, reserve that for cooking tomorrow. Place duck on a baking tray and chill in the fridge uncovered overnight.
When you’re ready to cook…
- Turn your Cuisinart Express Oven Air Fryer ON in Roast mode at 160 degrees. Add your duck and ensure the tray is added underneath to catch any oil. Bake for 60 minutes, checking every 15 minutes and basting with some of yesterday’s syrup.
- Duck should have a very crispy skin and be dark brown. Carve and serve immediately!
