INGREDIENTS:
- 50g plain flour
- Salt & freshly ground pepper
- 1 egg
- 50g panko breadcrumbs
- 2 tbsp. shredded coconut
- 12 uncooked king prawns, peeled with tails left on
- Olive oil for spraying
METHOD
- In a shallow bowl combine the flour, salt and pepper. In a second bowl, mix the egg with a fork, until well beaten. Finally in a third bowl, mix together the breadcrumbs and coconut.
- Coat each prawn with the seasoned flour, followed by the beaten egg and finally with the breadcrumb and coconut mix.
- Spread the prawns evenly in the basket and spray on both sides with the olive oil. Place the cooking basket into position 1 (top shelf) of the Gourmet Pro Multifuctional Combi Oven and place the baking tray underneath into position 2 to catch any crumbs.
- Set to Air fry at 180˚C, for 4 minutes each side - turning to ensure the prawns are evenly golden and crispy.
- Serve with a dipping sauce, such as sweet and sour or alternatively an aioli mayonnaise.
