
INGREDIENTS
- 2 cups almond flour
- 1 cup rice flour
- 3-4 Tbsp melted butter or coconut oil
- 1 tsp vanilla
- 2 tsp cinnamon
- ½ tsp nutmeg
- 2 eggs
- 1 cup milk of choice
- ¼ cup maple syrup
- 1 cup whipped cream or coconut cream
- 4 Tbsp tsp coconut sugar
- ¼ cup caramel sauce
METHOD
- Heat the Cuisinart Vertical Waffle maker to setting 4 - this will create a nice golden & crispy waffle to resemble the golden brown churros.
- To make the waffles - in a bowl simply add the almond flour, rice flour, melted butter, vanilla, eggs, milk of choice, maple syrup, 1 tsp cinnamon, nutmeg & mix together well until it comes together like a thick cake like batter. Set aside.
- Next up whip together the cream & the coconut sugar & add a few drops of the vanilla to the whipped cream & set aside.
- On a plate add in the cinnamon & mix it with coconut sugar. Set aside.
- Pour the batter with the spout into the waffle maker - I used about two spout fulls to get one waffle then wait until the waffle maker beeps then carefully remove the waffles gently & pop on to a plate.
- Repeat with the rest of the batter, I got about 3 servings of waffles with this batter .
- Add your waffles to a plate cut them into triangles.
- Dip the waffles into the caramel sauce & then dip them into the cinnamon & coconut sugar mix.
- Add whipped cream to the waffles
- Sprinkle with caramel sauce & coconut sugar and cinnamon mix.
