
Healthy Nut-Free Bars in the Cuisinart Air Fryer! Looking for a lunchbox snack that ticks all the boxes? These nut-free bars are air-fried to perfection! Customize with raisins, sultanas, or chocolate chips for variety. Ideal for school lunches or a quick snack on the go!
INGREDIENTS
- 2 cups (180g) rolled oats
- 1/2 cup (40g) desiccated coconut
- 1/4 cup (40g) sunflower seeds or pepitas
- 1/2 cup (75g) dried apricots, chopped
- 1/3 cup (80ml) honey or golden syrup
- 1/4 cup (60g) sunflower seed butter (or tahini)
- 1/4 cup (60ml) olive oil or melted coconut oil
- 1/2 tsp vanilla extract
- 1/4 tsp cinnamon (optional)
METHOD
- Set the Cuisinart Air Crisp Pro Oven to Bake at 160°C . Line the baking pan with baking paper.
- In a large bowl, combine rolled oats, desiccated coconut, sunflower seeds, and chopped dried apricots.
- In a small saucepan over low heat, combine honey, sunflower seed butter, olive oil, and vanilla extract. Stir until smooth and well combined, then remove from heat.
- Pour the wet mixture over the dry ingredients and mix thoroughly until evenly coated.
- Transfer the mixture to the lined baking pan. Use the back of a spoon or your hands to press it down firmly and evenly.
- Place the baking pan on the middle rack of the oven. Bake for 12–15 minutes or until the top is golden and set.
- Remove the pan from the oven and allow the oat bars to cool completely in the pan. Once cool, lift the mixture out using the baking paper and cut into 12 bars.
- Store the bars in an airtight container at room temperature for up to 5 days or in the fridge for up to 1 week.
- Note: you can swap apricots for raisins or sultanas, or add a sprinkle of chocolate chips for variety.
