Ingredients
- 1 cup whole dairy or nondairy milk
- ½ cup low-fat cottage cheese
- 1 large egg
- 2 tablespoons granulated sugar
- 1 teaspoon pure vanilla extract
- 1½ cups unbleached all-purpose flour
- 1¼ cups freeze-dried strawberries
- 1½ teaspoons baking powder
- ¼ teaspoon baking soda
- ½ teaspoon kosher salt
- Fresh fruit, for serving
Preparation
- Preheat the Griddler to 375°F with the griddle plates in place and the unit closed.
- In a medium bowl, whisk together the milk, cottage cheese, egg, sugar, and vanilla. In a separate bowl, whisk together the flour, dehydrated strawberries, baking powder, baking soda, and salt. Add the liquid mixture to the dry ingredients and stir with a whisk until just combined.
- When the Griddler has preheated, open to extend flat. Drop the batter by scant quarter-cups onto the griddle plates. Cook the pancakes for 3½ to 4 minutes. When pancakes are bubbling on the top, turn and cook for an additional 2 to 3 minutes. Repeat using the remaining batter. Serve hot with fresh berries of choice.
