RHUBARB LIME SUMMER COOLER

INGREDIENTS:

  • 2 stalks rhubarb (about 200g), chopped
  • 1 cup cold water
  • 1 tablespoon honey
  • Juice of 2 limes
  • 1 handful fresh mint leaves
  • 1–2 teaspoons sugar
  • Ice cubes
  • Sparkling water to top up

METHOD:

  • In your Personal Juicer & Blender, using the blender attachment, add chopped rhubarb, cold water, honey, lime juice, and mint leaves. Blend until very smooth.
  • Strain the mixture through a fine sieve.
  • Fill two glasses with ice.
  • Divide the rhubarb-lime mix between them (about half a glass each).
  • Top up with sparkling water.
  • Stir gently, garnish with extra mint and lime slices.
