INGREDIENTS:
- 2 stalks rhubarb (about 200g), chopped
- 1 cup cold water
- 1 tablespoon honey
- Juice of 2 limes
- 1 handful fresh mint leaves
- 1–2 teaspoons sugar
- Ice cubes
- Sparkling water to top up
METHOD:
- In your Personal Juicer & Blender, using the blender attachment, add chopped rhubarb, cold water, honey, lime juice, and mint leaves. Blend until very smooth.
- Strain the mixture through a fine sieve.
- Fill two glasses with ice.
- Divide the rhubarb-lime mix between them (about half a glass each).
- Top up with sparkling water.
- Stir gently, garnish with extra mint and lime slices.
