INGREDIENTS
- 2 cups (300g) self-raising flour
- 1/2 tsp salt
- 1/2 cup (125ml) milk
- 1/4 cup (60ml) water
- 2 tbsp (40g) unsalted butter, melted
- 2 tbsp Vegemite (adjust to taste)
- 1 cup (100g) shredded cheddar cheese
- 1/2 cup (50g) shredded mozzarella cheese
- 1 tbsp milk (for brushing)
METHOD
- In a large mixing bowl, combine the self-raising flour and salt. Gradually mix in the milk, water, and melted butter until a soft dough forms. Turn the dough out onto a lightly floured surface and knead for 2–3 minutes until smooth.
- Roll the dough out into a rectangle approximately 30cm x 20cm. Spread the Vegemite evenly over the dough, leaving a small border around the edges.
- Sprinkle the cheddar and mozzarella cheeses evenly over the Vegemite.
- Starting from one of the long edges, roll the dough tightly into a log.
- Slice the log into 12 equal pieces using a sharp knife.
- Lightly grease the cooking basket of your Cuisinart Air Crisp Pro.
- Arrange the scrolls in the basket, leaving a little space between each one to allow for expansion.
- Brush the tops of the scrolls lightly with milk for a golden finish.
- Set the air fryer to Air Fry - 180°C
- Cook the scrolls for 8–10 minutes or until golden brown and cooked through.
- Allow the scrolls to cool slightly before serving. They can be enjoyed warm or at room temperature and make a perfect addition to a back-to-school lunchbox!
