CHAI SPICED WAFFLES TOPPED WITH GINGER POACHED PEARS

INGREDIENTS

Chai Spiced Waffles:

  • 1 cup plain flour (120g)
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda 
  • 2 Tbsp caster sugar
  • Pinch of salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cardamom
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon nutmeg
  • 2 eggs
  • 1 cup milk
  • 2 Tbsp unsalted butter, melted
  • 1/2 tbsp lemon juice

Ginger Poached Pears:

  • 1 large pear- cored
  • 1 tbsp minced ginger
  • 2 tbsp honey
  • 2 tsp ground cinnamon

METHOD

  1. In a large bowl, whisk together the flour, baking powder, baking soda, caster sugar, salt & spices. In a second bowl, whisk together the eggs, milk, melted butter & lemon juice. Fold the wet ingredients into the dry ingredients and combine until smooth.
  2. Cut the pear into wedges, then combine with the ginger, honey and cinnamon in a saucepan. Cover with hot water, and stir until the honey is dissolved. Cover and simmer for 20 minutes, or until soft.
  3. Pre-heat the waffle maker (I’ve used setting 3). Pour a full cup of batter through the spout, wait for the waffle maker to beep, then carefully open & remove the waffle. Close the waffle maker and repeat with the rest of the batter. 
  4. Arrange the waffles on serving plates, and spoon over with the poached pears and drizzle with honey. Top with a spoonful of vanilla yoghurt or cream.
