INGREDIENTS
- 2 cups (180g) rolled oats
- 1 cup (80g) desiccated coconut
- 1 cup (150g) fresh strawberries, hulled and roughly chopped
- 1/4 cup (80g) sunflower seed butter (or tahini)
- 1/3 cup (80ml) honey or golden syrup
- 1 tsp vanilla extract
METHOD
- Add the rolled oats and desiccated coconut to the Cuisinart Prep Pro food processor. Pulse until the oats are finely ground but not powdery. Transfer the mixture to a separate bowl.
- Add the fresh strawberries, sunflower seed butter, honey, and vanilla extract to the food processor. Blend until smooth and well-combined.
- Return the oat and coconut mixture to the food processor with the strawberry mixture.Blend until the mixture comes together into a sticky dough. Scrape down the sides as needed to ensure even mixing.
- Take a tablespoon of the mixture and roll it between your hands to form a ball. Repeat until all the mixture is used (should make about 20 balls).
- Place the balls on a tray and refrigerate for 30 minutes to firm up.Store in an airtight container in the fridge for up to 1 week.
