STRAWBERRY BLISS BALLS

INGREDIENTS

  • 2 cups (180g) rolled oats
  • 1 cup (80g) desiccated coconut
  • 1 cup (150g) fresh strawberries, hulled and roughly chopped
  • 1/4 cup (80g) sunflower seed butter (or tahini)
  • 1/3 cup (80ml) honey or golden syrup
  • 1 tsp vanilla extract

METHOD

  1. Add the rolled oats and desiccated coconut to the Cuisinart Prep Pro food processor. Pulse until the oats are finely ground but not powdery. Transfer the mixture to a separate bowl.
  2. Add the fresh strawberries, sunflower seed butter, honey, and vanilla extract to the food processor. Blend until smooth and well-combined.
  3. Return the oat and coconut mixture to the food processor with the strawberry mixture.Blend until the mixture comes together into a sticky dough. Scrape down the sides as needed to ensure even mixing.
  4. Take a tablespoon of the mixture and roll it between your hands to form a ball. Repeat until all the mixture is used (should make about 20 balls).
  5. Place the balls on a tray and refrigerate for 30 minutes to firm up.Store in an airtight container in the fridge for up to 1 week.
